Bagel Bakers Seek Permit

Kyger Baker Products, Inc. located at 7575 Georgetown Road, applied for a minor source permit from the Indianapolis Office of Environmental services as part of the new bakery plan construction to make bagels.

According to Jeffrey Hege of OES, a permit is needed to bakery goods because the yeast creates ethanol when baked. The ethanol is classified as a volatile organic compound that is destructive to the ozone. Hege said it was not discovered until the mid 90s that these good smelling aromas released into the air were harmful to the ozone.

Hege said explained Harlan Bakeries is the parent company and they plan to double the plant size with the construction project.
